A Guide to Creating your Own Flowerfetti Cake

For a beautiful flowerfetti cake, it is important to point out that you can’t use just any flowers to decorate your cake. Not all flowers are edible and many florals can be quite harmful if eaten. It is also worth noting that most flowers are treated with pesticides and even flowers from a florist will have been treated to maximise the shelf life, so it’s best to buy your flowers from a reputable organic source or grow your own. If using petals from your own garden ensure that the species and variety are definitely edible; that they have not been sprayed with chemicals and that they are away from where pets have been. Alternatively, you can try your local farmers market, garden centre, Fallon and Byrne Food Hall or ask your caterer or baker if they can supply them.

Top Tips for a Flowerfetti Cake

  • Edible petals are best picked fresh, so gather them from the garden on the day you plan to use them.
  • Different petals have different flavours, so it’s a good idea to test your choices in advance to ensure they complement your cake.
  • Consider the type of cake and icing you are using. Some flowers have very delicate petals that can absorb moisture or fat from buttercream or fresh cream if left on the cake for too long.
  • Always remove the pistils and stamens before eating.
  • Keep allergies in mind, as some guests may be sensitive to certain blooms.
  • Even if you do not plan to eat the flowers, it is essential to use petals that are safe and edible.
  • Never push flower stalks directly into your cake. If using full blooms, insert them into flower picks first, which are available from cake decorating shops.
  • Dried edible petals are another lovely option for decorating, and can be easier to work with than fresh flowers.
